Scrambled eggs with smoked salmon
A luxurious breakfast for a special occasion, or served as a light main meal. This low in sugar and salt meal is cooked in a saucepan with a wooden spoon, only 282 calories.
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Serves: 4
Ingredients
125g smoked salmon
2 tablespoons single cream
4 eggs
40g butter
Lightly toasted, buttered bagels (optional)
Freshly ground black pepper (optional)
Method
1) Cut the smoked salmon into thin strips and place in a bowl with the cream. Leave to marinate for 20 mins.
2) Crack the eggs into a bowl. Add seasoning to taste (if preferred) and whisk together.
3) Melt half the butter in a saucepan and heat gently.
4) Pour in the eggs and stir continuously with a wooden spoon until the eggs begin to set. Add the salmon and keep stirring until almost cooked.
5) Remove from heat, stir in the remaining butter and serve immediately with toasted bagels.
