Chicken caesar salad

Chicken caesar salad is a very popular dish. The salad dressing can be changed if needed, you could use lemon or lime juice, or worcestershire sauce.
The anchovies are an optional ingredient. If using them for the first time add a little bit and taste the dressing as you do it as they are very salty.

Serves: 2

Ingredients
1 medium ciabatta loaf or 4 slices of crusty bread
3 tbsp olive oil
2 chicken breasts
1 romaine lettuce (leaves separated)

For the dressing
1 garlic clove
2 anchovies from a tin
50g grated parmesan cheese
5 tbsp mayonnaise
1 tbsp white wine vinegar

Method

1) Heat oven to 200C/fan 180C/gas 6. Tear the bread into big, ragged croutons. Spread over a baking tray and sprinkle 2 tbsp olive oil into the bread and season with a little salt. Bake for 10 mins, turning the croutons a few times during cooking so they brown evenly.

2) Rub chicken breasts with remaining oil and season. Cook the chicken in the pan on medium heat for 5 mins. Turn the chicken, then cook for 5 mins more until there is no sign of pink inside and the juices run clear.

3) Peel and crush the garlic. Mash the anchovies with a fork against the side of a small bowl. Grate a handful of cheese and mix with the rest of the dressing ingredients. Season to taste.

4) Tear lettuce into large pieces and put in a large bowl. Pull chicken into bite-size strips and scatter half over the leaves, along with half the croutons. Add most of the dressing and toss with your fingers. Scatter the rest of the chicken and croutons, then drizzle with the remaining dressing. Sprinkle the shaved parmesan on top and serve.
