To keep your fitness regime on track don’t forget your diet. Carbohydrates are great for giving you energy before a workout or after to restore your energy levels. You can find carbohydrates in bread, potatoes, pasta & rice.
It is recommended that a third of daily food intake should be carbohydrate based. So, whether you’re an aspiring chef or a novice, why not try out healthier versions of you’re favourite snacks without losing the all-important flavour.
Jackets with leeks and cheese
Jackets with leeks and cheese is a great meal
if you are on the go, its full of carbohydrates to
keep your energy levels up.
Preparation Time: 10 minutes
Cooking Time: 90 minutes
Serves: 4
Ingredients
4 Baking potatoes
2 medium leeks
25g of butter
4tbsp of crème fraiche
200g of grated cheese
Method
1) Rinse all the baking potatoes, pat dry and prick
with a fork several times.
2) Rub the skin with a small amount of olive oil.
3) Bake in the oven at 200c or gas mark 6 for 1 hour (or until soft).
4) While potatoes are baking chop the 2 leeks and cook in a pan with the 25g of butter. Cover with the lid and cook over a low heat for 10-15 minutes.
5) Halve the potatoes and scoop out the flesh, mash with the crème fraiche. Stir in the leeks
and the cheese.
7) Put the mixture back in the cases and cook for
a further 10-15 minutes.
